{"id":20389,"date":"2022-10-31T12:27:51","date_gmt":"2022-10-31T12:27:51","guid":{"rendered":"https:\/\/cvinoticias.com\/v3\/?p=20389"},"modified":"2022-10-31T12:27:51","modified_gmt":"2022-10-31T12:27:51","slug":"comienza-el-nuevo-sistema-de-troceo-de-carne","status":"publish","type":"post","link":"https:\/\/cvinoticias.com\/v3\/comienza-el-nuevo-sistema-de-troceo-de-carne\/","title":{"rendered":"Comienza el nuevo sistema de troceo de carne"},"content":{"rendered":"\n<p><strong><em>El nuevo esquema deja atr\u00e1s la media res, y traer\u00e1 beneficios en la calidad de la carne, en los trabajadores y consumidores.<\/em><\/strong><\/p>\n\n\n\n<p>La comercializaci\u00f3n de la media res vacuna finalizar\u00e1 el pr\u00f3ximo 1 de noviembre, cuando entre en vigencia el esquema de troceo dispuesto por el Gobierno nacional, el cual establece el l\u00edmite de 32 kilos para la distribuci\u00f3n de carne en el pa\u00eds.<\/p>\n\n\n\n<p>Este nuevo esquema de comercializaci\u00f3n mayorista decidido a trav\u00e9s de los entonces Ministerios de Agricultura, Ganader\u00eda y Pesca; Trabajo, Empleo y Seguridad Social, y Desarrollo Productivo, a trav\u00e9s de la Resoluci\u00f3n Conjunta 4\/2021, comenzar\u00e1 a funcionar este martes, con un a\u00f1o y medio de plazo para que los establecimientos frigor\u00edficos se acondicionen.<\/p>\n\n\n\n<p>Para el Gobierno, esta medida \u201crepresenta mayores est\u00e1ndares de calidad y sanidad sobre los productos c\u00e1rnicos, a la vez que favorece la transparencia comercial y presenta un avance hacia una mayor modernizaci\u00f3n de la cadena de distribuci\u00f3n de carnes en medias reses\u201d. Adem\u00e1s, busca \u201chacer m\u00e1s eficiente la cadena de comercializaci\u00f3n\u201d e implica \u201cactuar en defensa del consumidor\u201d, aseguraron en su momento las carteras intervinientes, dado que \u201ccomercializar en media res genera ineficiencias en la asignaci\u00f3n de los cortes que repercuten en el precio que \u00e9ste debe pagar\u201c.<\/p>\n\n\n\n<p>Por otro lado, desde el Senasa detallaron que \u201cde los frigor\u00edficos que se encuentran bajo los registros del organismo, que son los de exportaci\u00f3n y tr\u00e1nsito federal y que representan el 85% de la faena de Argentina, el 80% ya posee el rubro habilitado para cuarteo. El resto est\u00e1 avanzando en la adecuaci\u00f3n.\u201d<\/p>\n\n\n\n<p>Sin embargo, esta iniciativa gener\u00f3 divisiones dentro del sector c\u00e1rnico, ya que aquellos frigor\u00edficos dedicados mayormente a la exportaci\u00f3n aseguran que existi\u00f3 el tiempo necesario para que los establecimientos se adec\u00faen a la nueva disposici\u00f3n y que la misma traer\u00e1 sendos beneficios para consumidores y trabajadores, mientras que matarifes y abastecedores del mercado interno consideran que todav\u00eda no est\u00e1n dadas las condiciones para emprender este esquema y auguran suba de precios.<\/p>\n\n\n\n<p>Para Ravettino, \u201cel primer beneficiado va a ser el consumidor. Hoy la media res se arrastra por el piso del cami\u00f3n, por la vereda, en las paredes de la carnicer\u00eda con contaminaci\u00f3n cruzada constante.
